Fruit Pizza Summer Dessert

Summertime…the word evokes such wonderful thoughts – for us, it is Fruit Pizza! Long, sunny days, carefree times at a lake or beach, lemonade, tea (or sweet tea!), fresh fruit and vegetables, time spent with family or friends without a schedule prodding your day. For our family, one of the special recipes we enjoy especially during the summer is our Fruit Pizza Recipe. It is easy, delicious, and refreshing!

Delicious Fruit Pizza – Perfect for a Summer Dessert

Fruit Pizza on a Butter Cookie Crust

It all starts with a slightly underbaked cookie crust – soft, kinda doughy! Not too sweet to overwhelm the palate. Spread a smooth cream cheese mixture on the cookie crust and decorate with fresh, colorful fruit. What you have is a bunch of yum coming together to make a heavenly dessert. It takes a little time to bring it all together, but the delicious end product is worth every second.

Butter Cookie Crust:

  • 2 cups flour
  • 1 cup butter, softened
  • 1/2 cup sugar

Cream Cheese Topping:

  • 8 oz. cream cheese, softened
  • 1/2 cup sugar
  • 3/4 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 2 tablespoons lemon juice
  • 6 oz. non-dairy whipping cream or whipped cream

Fruit Toppings:

  • Blackberries
  • Raspberries
  • Strawberries, sliced in 1/2
  • Kiwis, sliced
  • Blueberries

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Grease a 14-inch pizza pan or round baking stone or line with parchment paper.
  2. Crust First: Mix the softened butter, flour, and sugar with an electric mixer, or a spoon if the butter is very soft. Chill the dough for 15 minutes.
  3. Bake the Crust: Roll the chilled dough onto prepared pizza pan or baking stone, be sure to leave space around the edge. Bake for 12 minutes. Remove and allow to cool.
  4. Make the Cream Cheese Filling: Using an electric mixer, combine the cream cheese, sugar, vanilla, almond extract, and lemon juice until smooth. Fold in whipped cream or non-dairy whipped topping until creamy. Spread over the cooled cookie crust and chill again for 15 minutes.
  5. Perfection: Top with fruit! Use berries, or kiwi, or grapes – just stay away from fruit that will brown (bananas, apples, etc.) over time. Cover with plastic wrap to keep it fresh until serving time and refrigerate.
  6. Enjoy: Cut into 8+ pie-shaped servings.
